Each cookie has ~5g protein and stays crispy for 3 weeks! Perfect for tea-time, kids’ tiffin, or guilt-free snacking. 👉 Don’t forget to LIKE 👍, SHARE ↗️ & SUBSCRIBE 🔔 for more healthy bakery-style recipes from Easy Cooking with Das! 📝 Ingredients (makes ~22 cookies, 20 g each) Dry Mix Jowar (sorghum) flour – 120 g (1 cup) Peanuts (roasted) – 20 g (2 tbsp) Almonds – 20 g (2 tbsp) Pistachios – 15 g (1½ tbsp) Cashews – 15 g (1½ tbsp) Walnuts – 15 g (1½ tbsp) Pumpkin seeds – 20 g (2 tbsp) Sunflower seeds – 15 g (1½ tbsp) Flaxseeds – 15 g (1½ tbsp) Sesame seeds – 10 g (1 tbsp) ➡️ Grind all nuts & seeds together into a coarse powder (not too fine). Wet Mix Unsalted butter (softened) – 100 g (½ cup)(or ghee) Jaggery powder – 60 g (⅓ cup, adjust to taste) Pinch of salt Cardamom / cinnamon powder – ¼ tsp (optional) Baking powder – ½ tsp (optional) Water / milk – 2–3 tsp (only if needed) 👩🍳 Method 1️⃣ Powder nuts & seeds – Grind all nuts & seeds into a coarse powder. Keep aside. 2️⃣ Cream butter & jaggery – Whisk butter + jaggery until creamy. (If jaggery is lumpy, sieve first or melt with 1 tbsp warm water, then cool). 3️⃣ Mix dry ingredients – Combine jowar flour, nut-seed powder, baking powder, salt & cardamom/cinnamon. 4️⃣ Make dough – Add dry mix into the butter–jaggery mixture. Mix gently into a soft dough. 5️⃣ Shape cookies – Roll into 20 g balls, flatten slightly, sprinkle sesame on top. 6️⃣ Bake – Preheat oven to 150℃.
