I did remove the silver skin from the meat side but that was it. You could score the fat if you would like but I left it whole form in order to try and render the fat and have that perfect fatty bite in the end. For the seasoning, I used Killer Hogs TX Rub and put a heavy layer on all sides. You could use a good course salt and pepper but TX sure it good on beef.
