Authentic Pakoras 1 tbsp cumin seeds 1 tbsp coriander seeds 3 cups(250ml) gram flour 1 tspn chilli powder 1 tspn cumin powder 1 tspn turmeric 1 tspn garam masala 1 tspn chilli flakes 1 tspn dried fenugreek leaves 1 tspn coriander powder 1 tspn salt 70g baby spinach leaves 1 medium onion - sliced 1 baking potato cut in to small thin pieces Water - enough to bind Coriander - small handful Oil - for frying Method: Coarsely bash the cumin & coriander seeds in a pestle & mortar. Take the gram flour and add the chilli powder, cumin powder, turmeric, garam masala, chilli flakes, fenugreek leaves, coriander powder and salt. Mix well and bind using enough water till you get a thick lump free paste. Add the spinach, onion, potatos and coriander, and mix well using your hand until all the ingredients are coated well. You may add more water to loosen the mix as per preference, but do not make it too runny as it won't hold shape when frying. The last thing you want is a flat fried pakora! Heat the oil and gently lower spoonfuls of the mix into the hot oil and fry until crispy and golden brown.
