This skinny mac and cheese is no different because it reduces the high calorie noodles down from 3 Cups or more to just 3/4 of a cup and replaces the rest with cauliflower and you never miss the other noodles! This is definitely not another diet, but the start to a lifestyle change. https://www.fitgirls.com/ Ingredients: (4 Servings) 350-400 Calories per serving 1 Head Cauliflower 3 Cups Cooked Macaroni Noodles 1/2 C. Pepperjack Cheese 1/2 C. Sharp Cheddar Cheese 1/2 C. Sour Cream 2-3 T. Milk Salt and Pepper to Taste 1 T. Butter 1/2 C. Panko Breadcrumbs 1/2 t. Garlic Salt 1/2 t. Onion Powder Hot Sauce if you Like Cut cauliflower into florets and boil 8-10 minutes. Remove with slotted spoon to a cutting board. Add macaroni to boiling water and cook to package directions. While macaroni cooks start the topping. Melt butter on medium heat and add in breadcrumbs. Cook for a couple minutes until golden brown. Season with garlic salt and onion powder. Drain pasta and return to pot. Chop cooked cauliflower into small pieces. Add cauliflower and other ingredients into pot with cooked noodles. Stir until all combined and cheese melts.
