Summer pudding for 4 people ・Frozen berries—350g (*defrost naturally) + a few for decoration ・Castor sugar—5 tablespoons ・Water—150ml ・Lemon juice—1 teaspoon ・Bread—8-10 pieces ・Double cream—150ml ・Castor sugar—1 tablespoon 1. Leave frozen berries at room temperature for 1 to 2 hours to thaw naturally. Cut the lemon in half. 2. Make a puree by blending the thawed frozen berries, granulated sugar, water, and lemon juice until smooth. 3. Place cream, sugar, and vanilla paste in a bowl and whisk until stiff peaks form. 4. Use a round mold to cut out the part that will become the bottom (6 cm in diameter) and the part that will become the lid (8 cm in diameter, one size larger than the bottom). The size varies depending on the model, so please match it to the model you have. 6. Prepare another piece, cut off the ears, and cut the rest into 4 to 6 pieces. This will be the side of the mold, so please match it to the height of the mold. 7. Line the mold with saran wrap. Dip the bottom part you cut in step 4 into the puree from step 2 (slowly until it soaks in) and place it in the mold. Dip the side part you cut in step 6 into the puree in the same way and stick it to the side of the mold. 8. Fill with 1/4 amount of whipped cream. 9. Cover with the large round bread cut in step 4. Wrap in saran wrap to prevent air from entering as much as possible and chill in the refrigerator until it cools (about 2 hours to overnight). 11. Open the saran wrap and place a serving plate on it. Turn it upside down and carefully remove the plastic wrap. Garnish with frozen berries if you like and serve.
