Recipe: New York Pizza Yields: 2 pizzas Prep time: 35 minutes active & 6–24 hours Baking time: 8-12 minutes Ingredients: Dough • 500 g (4 cups) all-purpose flour • 325 g (325 mL) water, room temperature • 2 g (½ tsp) active dry yeast • 4 g (1 tsp) granulated sugar • 12 g (1 tbsp) salt • 15 mL (1 tbsp) olive oil • semolina or cornmeal Cheese • 400g full-fat, medium-moisture mozzarella • 60g Parmigiano Reggiano Sauce • (1 can) whole San Marzano tomatoes • dried oregano • onion powder • garlic powder Instructions: 1. Combine yeast, water, and sugar. 2. Mix flour and salt. Add olive oil and yeast mixture. Stir until a shaggy mass forms. Knead on a floured surface until smooth and elastic. Rise for 6 hours 3. Split dough in half, form 2 balls. Rise for 1–3 hours at room temperature or in the fridge for up to 5 days (bring to room temp before shaping) 4. Place pizza steel on top rack & heat to 260°C (500°F) for at least an hour. 5. Shred mozzarella and Parmigiano. Crush tomatoes by hand and mix in oregano, onion powder, and garlic powder to taste. 6. Dust work surface with semolina. Stretch dough hand over hand leaving a cornice. 7. Dust peel with semolina. Spread 5 large scoops of sauce, sprinkle Parmigiano, then layer mozzarella. 8. Launch pizza onto steel. Bake 6–8 minutes, rotate halfway. Broil for 2–4 minutes until cheese bubbles and edges brown lightly. 9.
