Simple slow cooker sirloin beef and potatoes recipe. Thinly sliced top sirloin slow cooked in a delicious onion and pepper gravy and served over a bed of roasted garlic mashed potatoes. 1-1 ½ lbs. top sirloin beef 1 small yellow onion cut into chunks 1 small green bell pepper cut into chuncks 1 ½ cups of beef stock or broth ¼ cup Worcestershire ¼ tsp. dried dill weed ¼ tsp. dried thyme ¼ tsp. course black pepper 1 tsp. kosher salt 2 tbls. corn starch 2 tbs. cold water Season the beef on both sides with kosher salt then place in a very hot skillet, brown beef on both sides. Place onion and green pepper in the slow cooker. Top with beef. Combine broth, Worcestershire sauce, dill, thyme, pepper and pepper flakes and pour over beef and veggies. Cover and cook on high until meat reaches desired doneness and the onions and peppers are softened but semi-crisp, about 3-4 hours. (NOTE: make sure to check it at 3 hours so as to not over cook the beef. Every slow cooker is different. Some cook hotter than others.) Remove the beef and wrap in foil to keep warm. Combine the cornstarch and water until smooth and gradually stir into the cooking juices. Cover and cook on high until slightly thickened, about 30 minutes. Thinly slice the beef across the grain into strips and return to the slow cooker into the thickened gravy and heat through, about 10 more minutes. Serve over a bed of mashed potatoes and a colorful salad.
