Spinach & Onion Quiche For the Pastry 225 g (8oz) plain flour plus extra for rolling 100 g (4oz or 1 stick) butter chilled cut into cubes 3 - 5 tbsp cold water For the Filling 6 eggs 1 1/2 cup of milk 1 small onion 1 1/2 cup spinach 1 1/2 cup shredded cheese Salt to taste Directions 1.Preheat the oven to 350 degrees F. 2. Make the pastry: Place the 225g (8oz)flour, 1 stick of diced butter into bowl and rub in the fat with your finger tips until the mixture resembles bread crumbs. 3.Make a well in the center and add the water, a little at a time. Mix until it forms a dough. You may not need all of the water. Bring the dough together with your hands and shape into a ball and flatten into a disc. Wrap in cling film and place into the fridge for 30 minutes to chill. 4. Roll out pastry and put into standard quiche or pie dish. Leave in the fridge for 20 minutes before blind baking. ( this chills the butter again to help keep the pastry flaky when baking) 5. Pre-bake the pie crust for 20 minutes (Use pie weights or dry beans or rice on top of parchment paper to keep the crust from shrinking.) 6. After the 20 minutes, remove the pie, weights and parchment paper. Bake for an additional 10 minutes. 7. Meanwhile prepare the filling. Chop the onion and spinach and cook on medium heat until onions are translucent and the spinach has wilted. This will help take some of the moisture out so the pastry wont get soggy. 8. Combine eggs, milk, and salt and whisk until frothy. 9. Put your spinach and onion mixture into the pie crust followed by your cheese. Pour the egg mixture on top. 10.Bake for 45-55 minutes until the egg is set (slightly jiggly in the center is good) 11. Allow to chill for a minimum of 20 minutes to set further.
