Nopalitos (Cactus) The benefits and flavor of this popular Mexican ingredient are so good! The only bad thing for some people is the slimy consistency! But that can be fixed with an extra rinse after cooking. Nopales are cooked in many ways in Mexico; my favorite is with scrambled eggs in the mornings. This way, I’m showing you it is great to have them ready to eat or to cook them with something else. Ingredients: 6 Nopales 1/4 onion 4 garlic cloves 1 tbsp of Mexican oregano Salt Black pepper Preparation: Clean the thorns, spines, prickles, or whatever you call them, from the nopales, rinse them off, and ensure there are no thorns; cut them into small pieces and add in the pot with onion, garlic, oregano, salt, and black pepper to taste and enough water to cover; cook on medium heat for 20 min or until tender, and they change to a green olive color; strain the water and if you don’t like them too slimy, rinse them off.
