He helped that those traditions to a different level, through research and cultivating more than 70 types of oca and over 200 potato varieties, which he calls 'super papas' or super potatoes. He also pioneered this beautiful fermented drink, or 'oca wine', known as Oxalis. His production of Oxalis is one of the most sought-after native tuber drinks in the top restaurants of Lima, and he is set to open his own restaurant in the Sacred Valley soon... watch this space!
