To have a balanced taste, a dressing needs a thickener (oil, nut butter, or pureed veggies/fruit), sweetener (dates or maple syrup) salt (dulse flakes, sea salt, soya sauce), garlic, and spice (mustard, black pepper, basil, etc). Cover the food processor with a towel to reduce noise and splatter. To emulsify the dressing, pour the oil in slowly into a running food processor that has a bit of vinegar/citrus, mustard, and garlic in the bowl already. Use tahini to thicken your dressing and add a nutty flavour and bitterness that compliments the sweetness of the dressing. You want your dressing to be a bit too sweet and salty because those tastes get diluted when added to the salad. Store in an airtight container in the fridge for 3-5 days. Test the thickness of your dressing with a spoon, it should stick to the back of the spoon. You want it to coat the salad not pool to the bottom of the bowl. Seed oils should be avoided as they aren't a healthy choice. Nutritional yeast is a good vegan substitute for cheese. To make vegan mayo you can use mangos or avocados instead of eggs. Using dates as a sweetener adds fiber. Fresh pressed garlic adds a wonderful, pungent flavour to every type of salad dressing. Start with small amounts of potent flavors.
