Ingredients For the patties: 2 cups cooked chickpeas (rinsed and dried) 3 small boiled beets, finely grated 1 small onion, finely chopped 3 tbsp grated Parmesan 1–2 tbsp olive oil Salt and pepper, to taste Breadcrumbs (if needed, for texture) For the yogurt sauce: 1 cup Greek yogurt 1–2 tbsp olive oil 1 clove garlic, finely grated 1–2 tbsp lime juice Salt and pepper, to taste For baking & serving: Olive oil for greasing Extra lime juice and olive oil (optional) Bread, for serving Instructions Prepare the mixture Rinse and dry the chickpeas. Mash them with a potato masher. Add olive oil, salt, and pepper. Stir in the grated beets, chopped onion, and Parmesan. Mix until uniform. If the mixture is too wet, add a little breadcrumbs. Shape & bake Form small patties. Place them on an oiled baking sheet. Bake at 180°C / 350°F for about 30 minutes, flipping after 15 minutes. Make the yogurt sauce Combine Greek yogurt, olive oil, grated garlic, lime juice, salt, and pepper. Mix well and spread on a plate. Serve Place the baked patties over the yogurt sauce. Drizzle with extra olive oil and lime juice if desired. Serve with bread. Enjoy! 🥙
