SCONES (recipe from Maw Broon’s Afternoon Tea Book) Preheat oven to 450F / 230C / Gas Mark 8 In a large bowl sift together: 200g / 7oz all purpose (plain flour) 50g / 1 3/4 oz sugar (less if preferred) 1 tsp baking soda 2 tsp cream of tartar 1 tsp salt Add in: 50g / 1 3/4 oz unsalted butter Cut in butter with a pastry cutter or with your fingers until you have a consistency of soft breadcrumbs In a measuring cup, mix a beaten egg with enough milk to equal 125mL or a little more than 4 oz Add the milk mixture to the flour mixture until a soft dough is created. Turn dough onto a well-floured surface and work quickly and lightly. Roll or pat dough to 3/4” or 2 cm thick. Cut out scones with a 2 1/2” or 6cm cutter. Should make about 8 scones.
