Peak egg season is upon us! Our chickens think its spring and our young pullets are starting to lay. We have more eggs than we can use, so it's time to start preserving for the off season. What I love about water glassing is how simple it is. You mix your lime with water and cover the eggs. They're good to go for the next year! I used 3 TBSP hydrated lime to 1 qt of filtered water. You can also use pickling lime, which you can find here: https://amzn.to/3Fhze3q (affiliate link) Roughly three dozen eggs will fit in a gallon jar and it takes about half a gallon (two quarts) of the lime water to cover them. Store in a cool, dry, dark, place and rinse your eggs before use. You can use them just like fresh! You may find the yolk is runnier, but the taste is the same. Water glassed eggs will last at least one year, potentially more, but I have not tried it. If an egg cracks inside the jar it will ruin the preservation of your other eggs.
