ZETOV DOLMA - SARMA Vegetarian Dolma INGREDIENTS.. Always remember that, this type of dolma/sarma tastes 10 times more tastier, when cooked 2 days before 😊 and eaten cold. 1 jar ( 32 oz.) Grape Leaves 3 large Onions / 2 grated- 1 sliced in rounds. 1 large bunch of Persian Purple Basil 1 large bunch of Dill 1 large head of Garlic / grated 2 large ripe Tomatoes / grated 2 large Red Bell Pepper / 1 chopped & 1 sliced 2 1/2 c to 3 c Jasmin Rice / rinsed 1 1/2 c Walnuts / chopped coarsely 1 1/2 c black dried Currants 1 c Vegetable Oil 1 c Olive Oil / + some from drizzling. SPICES .. You will need plenty of. Measurements are to start you with, since it depends on your own palate. All to taste. 3 Tbsp. Mild Pepper Paste / regular tablespoon not measuring spoon. Heaping 2 to 2 1/2 c Sugar / sweetness depends on you. Should be on the sweeter side. Salt 1 Tbsp. Blk. Pepper 2 Tbsp.Paprika / or more 2 Tbsp. Dry Coriander /or more 3 Tbsp. Dry Cilantro 2 Tbsp.Onion Powder / plenty 3 Tbsp. Garlic Powder / plenty 2 Tbsp. Dry Parsley / or more 1 Tbsp. Dry Oregano 1 tsp. Dry Mint 4 to 5 Tbsp. Lemon Garlic Seasoning Remember you will need plenty of each seasoning, except the Mint. DIRECTIONS.. Begin by adding your oil into a very large pot over medium heat. Warm it up and add the onions. Sautee until browned. Add in the garlic and the chopped red oeppers, sautee together about 5 minutes. Add the pepper paste and stir, while diluting it in the hot oil with the garlic and the onions. Now add in the grated tomatoes and stir well and cook over medium heat until color starts turning beautiful red, about 7 minutes. Add the seasonings to your desire. Stir and lower heat to low and cook for about 10 minutes. Now add the rinsed rice and again cook on low heat. Give it our famous taste test. If anything needs to be added, which I'm sure it will 🤗 time to add it now. When it is to your liking the taste, set aside in a cool ventilated place to cool off completely. Rince off the salt and preservatives well off the grape leaves. Sepperate the tender leaves from the tough leaves. Pinch off the stems and begin rolling. Make sure you place the tough leaves you rolled on the bottom of the pot, and placing the tender lo leaves on top. Slice up the 1 onion and 1red bell pepper, and place it on the bottom of your pot. Then lair the grape leaves on top and continue rolling until all the jar of lol leaves is done. Once done, place the sliced onions, peppers,dill weed and the Persian basil on top. Sprinkle lightly with little salt, then drizzle tops with olive oil. Next 👍 place the dill and basil on top as shown in video and cover with a flat plate large enough to fit inside the pot on top and add the water. Enough to go over the grape leaves 1 to 2 inches. Raise the fire on high and bring to boil. Once boiling? Lower heat to medium and cook with the pot lid tilted about 40 minutes. Taste after that time to make sure the rice is cooked . Make sure you don't cook too much so it won't become mushy. Because once cooked almost all the way, while cooking off the rice will still cook with the heat in the pot.
