Hi welcome to Caribbeanj03. Thank you for coming into my kitchen with my sister and I. Today, we will be making our Cuban black beans soup. INGREDIENTS: To cook Black Bean in Instant Pot: • 1 pound (~2 cups) dried black beans, sorted and rinsed (no soaking required) • 5-6 cups water • 1 medium onion, chopped • 5 cloves garlic, minced • 3 bay leaves Add later: • 1 teaspoon ground black pepper • 1 ½ teaspoon chicken seasoning • 1 - 1 ½ teaspoons salt (to taste) OPTIONAL: • 2-3 tablespoons red wine vinegar (according to taste) • 1 tablespoon brown sugar (see link below for how to make Brown Sugar) Sofrito: • 3 tablespoons oil • 1 medium onion, chopped • 1 ½ green bell peppers, finely diced • ½ red bell pepper, finely diced • 1 stalk celery (diced) • 1 medium carrots (shredded) • 5 cloves garlic, minced • 1/4 teaspoon chicken seasoning • 1 teaspoon cayenne (optional) • 2 teaspoons oregano • 2 teaspoons cumin Instructions: COOK THE BEANS: INSTANT POT: 1. Sort and rinse the black beans. 2. Add the black beans, 5 cups of water, 1/2 the garlic, 1/2 the onions, and bay leaves to the instant pot. 3. Cover, make sure the vent is sealed. Cook on manual high pressure for 30 minutes. If using organic or older beans, they may require additional time. Once the timer goes off, allow a natural pressure release, about 30 minutes. 4. Make the sofrito while waiting for the Instant Pot to naturally release the pressure. SEE INSTRUCTIONS BELOW. SOFRITO: 1. Add the calery, carrots, peppers, half the garlic and half the onions into a blender jar and pulse a few times until the vegetables are minced but not puréed. 2. Heat the oil in a medium frying pan, over medium-high heat. When warm, add the herbs and spices: oregano, cumin, and cayenne pepper. Fry them for about a minute or 2 to bloom them and bring out the flavors. DO NOT BROWN OR BURN THEM. 3. Add the minced vegetables from the blender jar and a 1/4 teaspoon of chicken seasoning, saute for 5-6 minutes or until the vegetables are soften and most of the liquid has evaporated. 4. Remove the frying pan from the stove and set aside. CONTINUE WITH THE BEANS: 1. Turn the pressure valve on the Instant Pot to venting, to ensure all the pressure has been released. Open the pot. 2. Stir the beans and test the beans for doneness. 3. Remove the bay leaves. 4. Press the cancel button to clear the display screen. 5. Press the Sauté button: 30 will display (for 30 minutes of cook time). 6. Add the sofrito to the Instant Pot. 7. Add the chicken seasoning, ground black pepper and salt (to taste). 8. Stir in the ingredients, cover with glass cover and let them come to a full boil. 9. Taste the soup and adjust the salt to your taste. 10. If you desire: Add the vinegar and sugar to the pot or serve, on the side, as a condiment. 11. Serve My Cuban Black Bean Soup with a side of rice, fish, avocados, fried ripe plantains, and vinegar sauce. 12. Enjoy!
