Add 10-15 grams of salt to the boiling water. Add 300-400 grams of penne pasta and cook according to the package instructions, stirring occasionally. Once cooked, reserve some of the pasta water and drain the pasta. • Prepare the Pesto: In a grinder (or food processor), combine: 40-50 grams fresh basil leaves, 5-6 garlic cloves, 20 grams of pine nuts and 100 ml oil. Grind these ingredients until smooth. Add 25-30 grams of grated Parmesan cheese and 4-5 ice cubes. Grind again to combine and achieve a creamy consistency. Set the pesto aside in a bowl. • Make the Sauce: Heat 50-70 grams of the prepared pesto paste in a large pan over medium heat. Add a few tablespoons of the reserved pasta water and stir to create a smooth sauce. Pour in some Rich's Versatie Gold Cooking Cream, and stir until everything is well combined and creamy. • Combine Pasta and Sauce: Add the drained pasta to the pan with the pesto cream sauce. Toss to coat the pasta evenly with the sauce. If the sauce is too thick, add a bit more reserved pasta water to loosen it. • Garnish and Serve: Serve the pasta on a plate.
