Here’s a simple and delicious Lentil Soup recipe that's hearty, healthy, and perfect for a cozy meal. Lentil soup is packed with protein, fiber, and essential nutrients like iron, folate, and magnesium. Ingredients: 2 Tbsp toor dal 2 Tbsp Masoor dal 2 Tbsp Green lentil 2 Tbsp Mung beans ( green gram) 1 Tbsp Channa dal 2 Tbsp Moong dal 1 tablespoon oil or butter 1 medium carrots, sliced 3-4 beans capsisum(yellow,red and green) 6 cups vegetable stock (or water) 1/2 teaspoon turmeric (optional) 1/2 teaspoon sambar powder Salt and pepper to taste 1 tablespoon lemon juice (optional, for brightness) Instructions: Rinse the lentils under cold water until the water runs clear. Set aside for 1 hour. In a pressure cooker add the lentils and cook for 3-4 whistles. wait until the pressure releases. In a pan add oil, carrots, beans and sauté until softened (about 3 minutes). Add capsicum(red ,green, yellow).Cook for 3-4 minutes until the vegetables begin to soften. Blend the lentils mixture add water and check for soup consistency. Add the vegetables in to lentils mixture along with salt, pepper powder, turmeric and sambar powder. Bring the soup to a boil, then reduce the heat to low and let it simmer for 4-5 mins. Stir occasionally. Finally add some coriander leaves.
