Today I’m fixing a classic cocktail I don't really like, the Mary Pickford. On paper this recipe looks good - rum and pineapple are the main ingredients (classic combo) with a touch of grenadine and maraschino to add complexity. However, I think this drink falls flat, and I’m blaming the pineapple juice. Full disclosure, I’ve always had it with canned pineapple juice because I don’t have fresh pineapples at all times (and juicing a them is a chore). Maybe that’s my problem, but even so, pineapple juice can be tricky to work with. Wonderful on its own, but mixed with flavors that don’t pop, it can make for a watery drink stuck between sour and sweet. I do think the Mary Pickford has potential though, so today I’m going to workshop the recipe!
