I decided to cook it up with some veggies and shrimp. The authentic recipe would use their style of ingredients like rock sugar. But this is my version. Here’s what I did. Ingredients: 1 packet Thai green curry paste 1 lb shrimp with heads and shells 1 can coconut milk 1 zucchini, cut into bite-size pieces About 15 Thai basil leaves 2 blocks fried tofu, cut into bite-size pieces 1 cup water 1 Tablespoon fish sauce 3 teaspoons sugar Instructions: Rinse veggies and shrimp. Prepare vegetables as described above (cut, pull off branches) Add curry paste to heated pot. Add coconut milk, stir together well, and bring to boil. Add shrimp and water and cook until they change color. Add veggies and stir through to cook. Add fish sauce and sugar to balance out flavors. Serve with white rice. Enjoy!
