Southern bluefin tuna, like other pelagic tuna species, are part of a group of bony fishes that can maintain their body core temperature up to 10 °C (18 °F) above the ambient temperature. This advantage enables them to maintain high metabolic output for predation and migrating large distances. The southern bluefin tuna is an opportunistic feeder, preying on a wide variety of fish, crustaceans, cephalopods, salps, and other marine animals. Catching bluefin tuna off a jet ski is an exhilarating and intense experience for anglers. As the jet ski glides across the water, anglers keep their eyes peeled for the telltale signs of a school of bluefin tuna – a dark, churning mass of water, a sudden burst of speed, or the flash of a dorsal fin. Once a school is spotted, the jet ski driver revs the engine and speeds towards the fish. The angler casts their line, hoping to hook a big bluefin tuna, and the chase is on. The tuna is a powerful fish, known for its speed and agility, and it won’t go down without a fight. The angler must hold on tight as the fish pulls on the line, taking them for a thrilling ride across the water. As the tuna tire, the angler reels in their catch, fighting to keep the fish close to the jet ski. With a final burst of energy, the bluefin tuna jumps out of the water, its body gleaming in the sunlight. The angler grabs the line, hauls in the fish, and holds it up for a picture, the thrill of the catch still fresh in their mind. Catching bluefin tuna off a jet ski is an unforgettable experience, combining the excitement of the chase with the thrill of the catch. It’s a unique way to experience the thrill of big game fishing, and an adventure that will leave you with memories to last a lifetime. Remove the head, tail, and fins of the tuna. Cut a line down the center of the fish's back, then use a fillet knife to separate the two sides of the fish from the spine. Use a scraper or your knife to remove the skin from each fillet. Remove the red meat that runs along the center of the fish and discard it. Use a sharp knife to cut away any remaining bones, if desired. Rinse each fillet thoroughly under running water to remove any remaining scales or debris. Pat each fillet dry with paper towels and place on a clean cutting board.
