Subscribe to our channel for more simple home made recipes! / @samandfengcooking Instagram: / samandfengcooking Printable recipe: http://samandfengcooking.com/ Recipe: Tangzhong: ¼ cup water ¼ cup milk 23 grams flour ½ cup milk 2 teaspoon instant yeast 50 grams sugar 15 grams milk powder 1 egg 360 grams bread flour 1 teaspoon salt 58 grams softened butter 1. To make the tangzhong, add ¼ cup of water, ¼ cup of milk, and 23 grams of flour to a small saucepan. Heat it on low and continue to stir until it comes together into a smooth thick mixture with no lumps. Cool to room temperature before using. 2. For the bread, add the flour, instant yeast, milk powder, salt, sugar, egg, milk and all of the tangzhong. 3. Using the dough hook attachment, mix the dough on low speed for 5 minutes. 4. Now add the softened butter. Scrape down the sides as needed. 5. Once all the butter is mixed in, mix on a higher speed for about 10 more minutes. The dough should become smooth and pull off cleanly from the sides of the bowl. Add more flour if it is too sticky. 6. Spray a bowl with cooking oil and add the dough, cover and let rise in a warm place for one hour or until doubled in size. 7. Now it’s time to shape, weigh the dough and divide that number into 8, that is what each bun will weigh. Each bun for me was 106 grams. 8. Shape each piece of dough into a perfect ball, add it to a parchment lined baking sheet. 9. Cover with a cloth and let rise for 30 minutes or until doubled in size. 10. Add 1 egg and 1 teaspoon of water to a bowl and mix for the egg wash. Brush the egg wash on each bun and sprinkle on black and white sesame seeds and poppy seeds or whatever you like. 11. Bake buns at 350°F for 25 to 30 minutes or until golden brown. 12.
