Hey y'all, I'm Jan. Today, I wanted to make a no bake banana pudding cream cheese pie. And so that's what I did. But, I did it with a couple of substitutions, that turned out great in my opinion! So if you're in a pinch or don't have all the right ingredients on hand, try these: *You'll need a 9 inch pie plate. Any kind. For your ingredients: 1/2 cup of Sweetened condensed milk 1 tbs plus 1 tsp of lemon juice 3.4 oz instant Banana Pudding 1 and 1/2 cups Whole Milk (or 2%) 8 oz block of soften Cream Cheese 12 sheets of Graham Crackers (or a Graham cracker crust if you have it) 3 tbs Sugar 8 tbs of melted butter (I only used 6 and my crust was really crumbly). I like the crumbly crust. But if you don't, melt a whole stick of butter. First, get a large zipper bag and crush your graham crackers. Can use a rolling pin, a hammer, or crush them with your hands. In a medium large bowl add your graham crackers, sugar, and melted butter. Mix until all of your graham crackers are coated in butter and the sugar is well mixed in. Then pour your crust into your pie plate. Can use the bottom of a 1 cup measuring cup to flatten and smooth out your graham crackers to make your crust. Once you're satisfied with your crust, put it in the refrigerator for an hour for it to hard up. In a large bowl, use a beater and beat your cream cheese until it's silky smooth, then set aside. In a small bowl, add your sweetened condensed and lemon juice. Whisk it until the sweetened condensed milk thickens up and all juice is gone. It will still taste sweet, but that lemon juice cuts the sweetness a good bit. Take your small bowl of sweetened condensed milk/lemon juice, and add it in to your bowl of cream cheese. Use your beater and mix together well. Taste it to make sure it has some sweetness to it. That's all we're going for. Then set that bowl back aside. In another tall bowl, add your banana pudding mix and your milk, and beat on high for 1.5 to 2 minutes. It should be nice and thick then. Then take your pudding, and add it to the cream cheese/sweetened condensed milk mixture. Beat it all together until it's all the same color. It will get increasingly thicker as you go. Once it's too thick to keep beating, it's ready. Pour your pie mix into your graham cracker crust and spread it out nearly to the edge. Refrigerate for up to 1 hour. You can slice and serve as is. Or you can add some strawberry glaze like I did. Absolutely DELICIOUS!! So if ever you have a sweet tooth that involves banana pudding pie and strawberries, this one works very well.
