Banh Ja'neuk- (Glutinous Sweet Rice Ball W/ Coconut milk) INGREDIENTS: FILLINGS DOUGHS: 1-lb. peeled mung beans-pre-soaked for 2hr 1-16 oz bag of glutinous rice flour 1-tsp. jasmine extract 1/2-cup rice flour 1-tbsp. salt 2-1/2 to 3 cup of hot water 1/4-cup sugar 3-cups water for cooking MAKING COLOURFUL DOUGHS: Divided the dough into four small portion then add few drops of food colouring of choice and knead the dough until well blended. FILLING: First, wash the mung beans several times until the water is clear, then into the pot with 3-4 cups of water and cook the mung bean until tender. Once it's cook and tender, drain the remaining water. Then use the blend or mashing with hand, mashed it well enough to be able to form it into a small ball. After it's all smooth and well blended, then form it into 1/2 inch ball size. SYRUP: 2-cup of palm sugar/sugar cane sugar 2-1/2 cup of water 1-tsp. salt 1-big cut of fresh ginger root-optional Into a small pot, bring the water to boil, then add the palm sugar and salt and ginger root. Keep stirring until the sugar melted and let it boil for two minutes then bring out from the stove and set it aside to call down. COCONUT CREAM: 1-13.5 fl. oz. coconut milk 1/2-tsp. salt 2-tbs. sugar Into a small pot, open up the can of coconut milk. Then let it boil for 7 minutes then add salt and sugar. Stir until the sugar melted completely then remove from the heat and set aside to cool down. EMBELISHMENT: 1/4 cup of black or white roasted sesame seeds
