Foodwise, Kaya means a rich and aromatic jam. It's a Malaysian coconut egg jam which is so popular with toast and butter. I have posted a video here recently on how to make Keto Kaya (Coconut Jam) and this is an extension of using the Kaya (Coconut Jam) to make Keto Muffins. This coconut jam is perfumed with the aromatic flavor of pandan (screw pine leaves), hence the green color. It's guiltfree, fragrant and delicious. And you can make loads of it as it keeps well for 4 to 8 weeks, and the ingredients are minimal and inexpensive. Even the pandan (screw pine leaves) juice can be frozen so I make lots of it as it's convenient to make new batches of Keto Kaya anytime. The method I showed you in the video on how to make Keto Kaya is a no brainer - simple and quick unlike traditional way which takes hours. You can use any low carb natural sweetener such as stevico, stevia liquid/powder, lakanto (monk fruit), erythritol or xylitol. Some of these may be available at organic shops or online. I love spreading this Coconut Jam on my keto buns (see video on how to make keto buns here). But using it to make Keto Muffins brings it to a whole new level. So soft, moist, fragrant and delicious. Besides being easy and simple to make without any equipment, these muffins keep well for about 2 weeks refrigerated and can be frozen for that convenient time when I feel like having a dessert. Here's an update using coconut flour instead of almond flour and it is just as good. Coconut flour is much lower in carbs and a lot cheaper than almond flour. But because coconut flour is more absorbent, we need to increase the eggs and liquid. So, I am providing the measurements here. INGREDIENTS Almond Flour 360 g (3 cups) almond flour 300 g (1.2 cups) plain yogurt 6 eggs 60 g(4 tbsp) melted butter 300 g (3/4 cup + 10 tsp) Keto Kaya 2 tsp baking powder 1 tsp baking soda 1 tsp salt Low Carb Natural Sweetener to taste Coconut flakes for garnishing Coconut Flour Option; 1/2 cup coconut flour 12 eggs Note: Everything else remains the same. DIRECTIONS 1. In a big bowl, add the eggs, yogurt and butter. Whisk until smooth and creamy. 2. Add all other ingredients and mix until well combined. 3. Spoon the batter into paper cups up to 3/4 height. 4. Bake at 350F or 180C for about 15 minutes or until cooked. 5. Top with coconut flakes.
