Here’s is the recipe for the Habichuelas for 4 persons: Ingredients: 2 tablespoons extra virgin olive oil 1 small onion finely chopped (white or red) about 1 cup 2 cloves of garlic (minced) 1/2 of a small green bell pepper, finely chopped (about 1/2 cup) 1/2 a cup Tomato Paste 1/2 of a packet of Sazón Goya con Culantro y Achiote (Coriander and Annatto) Salt and Pepper to taste (about 1/2 tablespoon of salt) 1 tablespoon Red wine vinegar (you can add more to your liking) 1 can (1 pound or 13 OZ) GOYA Red Kidney Beans undrained Cilantro leaves (to taste) Preparation: Heat the oil in the same pot where you will do your beans, add the onions and garlic and sauté over low heat until tender. Add the Tomato paste and mix well. Add the beans plus 1 cup of water, add the salt, and the red wine vinegar and the Goya seasoning packet and mix carefully (so you don’t break the beans), then add a small bunch of the cilantro leaves. Cook over low heat covered for 15 minutes. You can add more water to taste. Serve over hot white rice or yellow rice. YELLOW RICE Recipe 1 packet of VIGO YELLOW RICE (with Saffron) 10.2 OZ 2 tablespoon of extra virgin olive oil Preparation: In a large saucepan with a tight fitting lid bring 2-1/2 cups of water to boil. Add 2 tablespoons of extra virgin olive oil and the packet of Vigo Yellow Rice bring to a boil while stirring. Reduce heat, cover and simmer and cook for 20-25 minutes. WHITE Rice Recipe Any white rice, but I prefer the ARBORIO Rice (because of the starch). Cook according to package instructions.
