Acorn Flour Pancakes with Pine Nuts

This recipe's from my book and I've been meaning to do a walkthrough of it for a while. At the end of the day they're just basic pancakes, but the cornmeal and acorn flour add some interesting body and texture here. The best part though, is the pine nuts, and flipping each pancake over to reveal golden-brown, toasted nuts. They can be a little tricky until the pan gets up to the right temperature, but they're really fun once you get the hang of them.
