🌿Ingredients: 8-9 fresh Amla (Indian Gooseberries), washed 1 tbsp oil (any cooking oil works) 1 tsp cumin seeds 2 dried red chillies 1/2 tsp hing 1 tsp whole coriander seeds 11/2 tsp fennel seeds (saunf) 1/2 tsp fenugreek seeds (methi dana) 11/2 tsp mustard seeds (rai) 1 tsp onion seeds (kalongi) 1 tsp red chilli powder Salt to taste 5-6 cubes of jaggery (adjust per taste & liking) 👉Method: Wash the Amla thoroughly and transfer them to a steamer. Steam the Amla for 10 mins until fork tender. Once ready, using knife, cut the Amla into chunks or slices as shown in the video. Now add oil to a pan or kadai, once heated add cumin seeds, dried red chilli and hing and saute for 20 seconds. Now add the remaining whole spices and cook on low medium until fragrant, this will take anywhere from 1-2 minutes. Add the steamed Amla to the kadai and give it all a good mix. Add salt and red chilli powder stir well, put the lid on and allow the Amla to cook for another 3-4 minutes. Lastly add jaggery, mix well and allow it to melt completely. This should take a couple of minutes. Once done, turn the stove on and allow the launji to cool down a bit before transferring to a clean jar or container.
