This is Episode 5 of Magical Breakfast & Brunch — where we make mornings feel special without making them complicated. They’re fluffy from ricotta, slightly tangy from Greek yogurt, and bright from fresh lemon zest. Perfect with berries, maple syrup, or just a little powdered sugar. Let’s cook together. 🧾 Full Recipe Ingredients (serves 2–3) • 2 eggs • 20 g sugar • 200 g ricotta • 50 g Greek yogurt • 2 g vanilla extract • Zest of 1 lemon • 30 g melted butter • 100 g all-purpose flour • 6 g baking powder • Pinch baking soda • Pinch salt • Neutral oil for the pan For serving • Powdered sugar • Fresh berries • Maple syrup / honey / yogurt 👨🍳 Instructions 1. Whisk eggs with sugar for about 1 minute. 2. Add ricotta, Greek yogurt, vanilla, lemon zest and melted butter. Mix gently. 3. Add flour, baking powder, baking soda and salt. Mix just until smooth — don’t overmix. 4. Let batter rest 2–3 minutes. 5. Heat pan over medium-low. Lightly oil and wipe excess. 6. Spoon batter into pan. Cook about 3 minutes until golden. 7. Flip and cook another 2–3 minutes. 8. Serve warm with berries and syrup. Soft inside. Golden outside.
