I see no reason to put PID (temperature control). That's why: Naturally processed or dark roasted? And the coffee burns and turns bitter? Brew using a cold holder. Does coffee like temperature too much? Warm up the boiler by switching on the steam mode for a short time (5-15 seconds). I don’t know which boiler is in it, I didn’t open it. There is information that the factory is set to 14-15 bar. Typically, this pressure can cause channels in the coffee pill, which will make the extraction uneven (the coffee will be bitter and sour at the same time). In our case, this was not observed.
