Pickles are a great way to bring some acidity and brightness to your plate! They're super easy to make and you can mix and match the flavors to your liking! Pickling Liquid: Yield: ~20 fl oz Ingredients: 1⅔ Cups Water 1 Cups Vinegar of Choice (White Distilled is traditionally used) ⅔ Cups Sugar ⅓ Cups Kosher Salt 2 Ea Bay Leaves 1 Ea Thyme Sprig 10 Ea Black Peppercorns —------------------------------------------------------- 1 Cup Veggie or Fruit of choice (Kirby Cucumbers are what's used for traditional “pickles”) Note: The Pickling Brine ratio is 5 Parts Water:3 Parts Vinegar:2 Parts Sugar:1 Part Salt I like to use weight to measure out the ingredients instead of volume measurements as it comes out accurate everytime Reduce the salt to ¼ Cup for high-water content veggies such as cucumbers Instructions: Combine all ingredients into a small sauce pan. Bring the mixture to a boil and then immediately turn off the heat. Give it a stir to dissolve any remaining sugar or salt and then pour liquid over 1 Cup of sliced veggies in a heat proof jar. Let sit for at least an hour for the veggies to marinate. Allow to cool and enjoy!
