One of the most common questions we hear is what does this man eat? We spoke to his nutrition coach, Stan Efferding, to learn the ins and outs of his unusual diet that lets him eat over 8,000 calories a day without feeling bloated. THOR BJORNSSON CALORIES AND MACROS Calories: 8,000+ Protein: ~1 gram per pound of bodyweight (approx 400 pounds) Fat: ~0.4 grams per pound of bodyweight Carbohydrates: The rest of the calories This means he's eating at least 5,000 calories of carbs every day. Where do they come from? DIET STAPLES Red meat White rice Low FODMAP vegetables This is the template most of his meals follow. Red meat is a denser source of B-vitamins, creatine, and iron than most other protein sources but he also consumes whole eggs and fatty fish. The white rice is low in fiber and can help to stave off feelings of bloating and indigestion. Low-FODMAP foods refers to types of carbs — Fermentable Oligo-, Di-, Mono-saccharides And Polyols — that cause indigestion among people with IBS. Why? At this volume of food, they could potentially slow digestion and cause digestive issues. That's what Efferding has found in his experience. Low FODMAP foods that are emphasized are spinach, bell peppers, carrots, fruit, and potatoes. WHAT THOR LIMITS *Grains, except white rice High raffinose, high FODMAP vegetables like broccoli and cauliflower Legumes Garlic and onions (also sources of FODMAPs) It may be surprising to see a man with a muscular, toned physique avoiding bodybuilding staples like brown rice and broccoli, but Efferding says his diet helped to fix Thor's metabolic syndrome and fatty liver disease. (But remember, this isn't medical advice.) THOR BJORNSSON'S SUPPLEMENTS The diet emphasizes nutrients like choline, Vitamin B12, folate, potassium, and sodium, all of which he gets from whole foods and added salt. He does however supplement Magnesium (supplemented) Vitamin D3 (supplemented) Efferding sometimes suggests hydrochloric acid pills to help improve digestion and mineral absorption, along with tudca and n-acetyl cysteine for reducing liver enzymes and increasing appetite, although these he recommends on a very individual basis after doing some blood tests and monitoring the client's lifestyle.
