From pantry staples to fresh produce, I’ll walk you through what we bought, how we plan to use it, and some meal ideas to make the most of every dollar. Whether you’re meal-prepping or just need a quick top-up haul, this video is all about budget-friendly grocery shopping without sacrificing quality or taste! I also made lunch by making a grilled egg and cheese sandwich and I share my recipe in the video. Grocery List: Mixed Portion Frozen Chicken Mild Curry Powder Cinnamon Spice Basmati White Rice Instant Yeast Salt Cranberry Bread Extra Large Eggs Cheddar Cheese Canned Diced Tomatoes White Sugar Rooibos Tea Bags Mixed Vegetables Salted Butter Raisins Apricot Jam Red Speckled Beans Grilled Cheese and Egg Sandwich Recipe Ingredients (Serves 2-3): • 6 slices of bread (e.g., brown cranberry low GI bread) • 3 extra-large eggs • 1 small block of cheddar cheese, grated (adjust quantity to taste) • 1 small spring onion, finely chopped • 3 small tomatoes, chopped • 1 tablespoon butter (for cooking eggs and spreading on bread) • 1 teaspoon chutney sauce Method: Scrambled Eggs: 1. Crack the eggs into a bowl and whisk until smooth with no streaks remaining. 2. Heat a skillet over medium heat and melt a small amount of butter. 3. Add the chopped spring onion with a pinch of salt and sauté briefly. 4. Pour in the eggs and let them cook undisturbed for a few seconds. 5. Gently pull a spatula across the bottom of the pan to form large, soft curds. 6. Cook over medium-low heat, stirring and folding every few seconds to prevent drying out. 7. Remove from heat when the eggs are mostly set but slightly creamy. Season with salt to taste. Grilled Cheese Sandwich: 1. Butter one side of each bread slice (this will be the outside). 2. Spread chutney sauce on the inside of each slice. 3. Layer with grated cheese, scrambled eggs, and chopped tomatoes. 4. Top with another slice of bread, buttered side facing out, to close the sandwich. 5. Grill the sandwiches on a preheated pan or grill until the bread is golden brown and the cheese has melted. 6. Slice and serve hot for a quick and satisfying meal!
