Looking for a guilt-free snack to enjoy? Our gluten-free Peanut Butter Ba-Nana Flake® cookies* are absolutely delicious and are so simple ad easy to make. You will need 7 ingredients that you most likely have in your pantry already. *We are using Nana Flakes® (our freeze-dried bananas) as an egg substitute in this recipe. Recipe makes around 20-22 cookies You will need: 1 tsp vanilla extract 1 tsp baking soda 2 tbsp of Nana Flakes® 1/2 cup granulated sugar 1/2 cup light brown sugar 1 cup peanut butter 1/2 cup chocolate chips (Use vegan chocolate chips to make this recipe vegan) Directions: 1. Mix 2 tbsp of Nana Flakes® with 6 tbsp of cold water. Let rest for 5 minutes to thicken up before incorporating it into the batter. 2. Combine granulated sugar, brown sugar, and baking soda in a bowl. 3. Add in peanut butter, the Nana Flake mixture, and vanilla extract. 4. Roll into balls onto parchment-lined baking sheets. 5. Bake at 350 degrees for 9-12 minutes (time will vary depending on oven). 6. Cool on baking sheets for 5 minutes before transferring to a wire rack. Cookies should be stored in an airtight container.
