This classic Indian breakfast comes together in just 10 minutes with my 5-step foolproof method. 📝 *FULL RECIPE WITH MEASUREMENTS:* INGREDIENTS: • 2 cups thick poha (flattened rice) • 1 medium onion, finely chopped • 1 small potato, finely diced (optional) • 4-6 green chillies, slit (According To Taste) • 8-10 curry leaves • 2 tbsp raw peanuts • 1 tsp mustard seeds • 1 tsp cumin seeds • ¼ tsp turmeric powder • 1 tbsp sugar (optional, balances flavors) • Salt to taste • 2 tbsp cooking oil • Juice of ½ lemon • Fresh coriander for garnish • Sev & pomegranate for serving (optional) METHOD: 1. RINSE: Wash poha in a strainer under running water for just 10 seconds. It should be moist but not soggy. 2. TEMPER: Heat oil, add mustard seeds. When they pop, add cumin, green chillies, curry leaves, and peanuts. 3. SAUTÉ: Add onions and potatoes. Cook until onions are translucent. 4. SEASON: Add turmeric, salt, and optional sugar. Mix well. 5. COMBINE: Add moist poha. GENTLY FOLD (don't stir!). Cover and steam on low heat for 2 minutes. 6. FINISH: Add lemon juice and fresh coriander.
