Specialty coffee is not a new concept. It is also not just "expensive coffee". First coined by "Erna Knutsen" at a coffee conference in France back in 1978, the meaning and dream has grown astronomically since. What we know today as "specialty coffee" has far surpassed what was ever thought possible. Specialty coffee has created the Third Wave Coffee movement and to be honest, the sky is the limit going forward. With farming sustainability and ethical work practices, the specialty coffee movement is making strides in providing better opportunities and fair practices for the farmers. I remember when I first tasted quality coffee. It completely changed my outlook and experience with the commodity. How could something so unique, so rich in flavors be considered just a commodity?
