Slow days of spring in the English countryside - it looks like spring is finally starting here in England, thought I managed to catch a cold during the sunniest of days. I spent these few days at home, enjoying sunshine from my garden and spending ordinary spring days in a slow and peaceful way. 🌿My art: www.dariamundi.com ✨Pancake recipe: 3 eggs 600ml of milk 225g plain white flour (Optional - 2tbsp of white sugar) Whisk 3 eggs in a bowl, add a splash of milk. Then sieve through 200g of plain white flour (of you want thin pancakes, if you want thicker pancakes, add extra 50-100g of flour.) Mix until well incorporated. Then add the rest of your milk and optionally sugar. Mix well. No need for any baking powder or baking soda in this recipe! Preheat a pan very well, add a bit of oil and coat the pan with a brush (to prevent oil from puddling). Pour a ladle-full of batter and let it cover the pan. Fry on one side for about 3 minutes, until the pancake starts turning golden on the side facing the pan. Carefully lift the edge to check. When the pancake looks golden, carefully flip it to the other side. Cook for another minute. I haven’t added any sugar to my pancakes so I ended up sprinkling each pancake with cinnamon sugar mix.
