RECIPE: Ingredients 2 lbs beef chuck, cut into 1½-inch cubes 2 tbsp flour 1 tsp salt ½ tsp black pepper 2 tbsp olive oil 1 large yellow onion, diced 3 cloves garlic, minced 3 large carrots, sliced 3 Yukon gold potatoes, cubed 2 tbsp tomato paste 1 tbsp Worcestershire sauce 3 cups beef broth 1 cup Guinness (or additional beef broth) 2 sprigs fresh thyme (or 1 tsp dried) 1 bay leaf 1 cup frozen peas Instructions Toss beef with flour, salt, and pepper. Heat olive oil in Dutch oven. Brown beef in batches. Remove and set aside. Add onion and cook 5 minutes. Add garlic, cook 30 seconds. Stir in tomato paste. Add beef back in. Pour in broth and Guinness. Add Worcestershire, thyme, bay leaf. Cover and simmer low for 90 minutes. Add carrots and potatoes. Simmer 30 more minutes. Stir in peas at the end.
