You are going to LOVE these amazing, healthy, low-cal dips. They are perfect for summer BBQs, added to your favourite sandwiches or wraps, and centred on your fruit tray! I’ve added the macros for the entire recipe of dip so divide as necessary. I totally love eggplant, and I hope you do too! If you’re not too sure – give this dip a try. You may be surprised! ROASTED EGGPLANT DIP [552 CAL – 21G FAT – 16.5G PROTEIN] -1 medium eggplant -2 heads of garlic (not just the clove) -Juice of ½ a lemon -2-3 chopped green onions (save some of the green for garnish) -1/2 cup 0% plain Greek yogurt -Salt and pepper to taste 1. (This step is optional) Char outside of eggplant under broiler or on a gas burning stove. 2. Roast eggplant and garlic cloves (with the garlic wrapped in foil with tops sliced off as in video) for 1 hour at 400 Fahrenheit until VERY soft. 3. When you’re able to handle, peel/scrape the “meat” of the eggplant into a food processor. Squeeze in roasted garlic. 4. Add all other ingredients and pulse in food processor until smooth. 5. Add more Greek yogurt if desired and adjust seasoning if necessary. 6. Serve with veggies, baked pita chips, on roasted meats, or in your favourite sandwich. WAY TOO SIMPLE FRUIT DIP [180 CAL – 4.75G FAT – 19G PROTEIN] -1 cup (250g) low fat cottage cheese (I used 2%) -106g cup of prepared sugar free pudding (choice of flavour) OR ½ pack 20g fat free pudding mix -Optional PB2 either stirred in or sprinkled on top 1. Combine cottage cheese and pudding in food processor 2. If using powdered mix, you will need to add some water to desired consistency (start with ¼ cup) 3. Note: I used 2 pudding cups in the video so add an additional 50 calories, 1.5g fat, and 2g protein WHITE BEAN + TOFU DIP [642 CAL – 11.05G FAT – 42G PROTEIN] -1 can 19oz or 541ml white kidney beans (or other bean) -150g soft tofu -Juice of 1 lime -1/4 cup chopped cilantro (or parsley if you don’t like cilantro) -1/2 tsp garlic powder -1/2 tsp cumin -Dried onion flakes -(Optional garnish of crispy fried onion topper & extra cilantro) 1. Add everything to the food processor except the dried onion flakes 2. Process until smooth 3. Stir in dried onion slakes 4.
