Baked Stuffed Tomatoes Recipe: Stuffing: make 2 cups of white rice seasoned with 2-3 tsp. of Knorr Tomato Chicken Bouillon ( found in Latin food stores and Amazon, a great seasoning for soups, stews etc. to keep in the cupboard) cover and set aside. in a skillet brown 1 lb. of ground turkey with 1 tsp. of Italian seasoning and 1/2 tsp. of pepper ( ground chicken of beef can be substituted ) drain fat and set aside. in a measuring cup mix 3/4 cup of boiling water and 1 tsp. of Knorr Tomato Chicken Bouillon and set aside. using the same skillet on medium heat add 1/2 onion and 2 stalks of celery all finely diced add 1/2 tsp. of pepper and stir add 3 Tbs. of the mixed Tomato Chicken broth and stir add 2 large cloves of garlic finely diced, 1/2 tsp. of crushed red peppers, 7 fresh basil leaves finely diced, 1 tsp. of oregano, 2 tsp. of olive oil and stir for 2 minutes add the cooked ground turkey and stir add the 2 cups of cooked rice and stir add 1/2 cup of finely chopped parsley add remainder of the mixed tomato chicken broth stir well cover and remove from heat *This recipe above is a fabulous meal or side on it's own! Next we'll go on to stuffing the tomatoes! Stuffing the tomatoes: slice the tops of the tomatoes off hollow out the tomatoes using a pairing knife and a spoon, twist out core and place in a strainer and bowl, squeeze out 3-4 oz. of the juice and set aside place hollowed out tomatoes in an oven safe dish ( spray dish with cooking spray ) fill the tomatoes with the stuffing generously top with a 3 cheese Italian mix ( can be purchased pre shredded in a bag- mozzarella, parmesan and provolone) top the cheese with a sprinkle of Italian seasoned bread crumbs drizzle the fresh squeezed tomato juice on and around the stuffed tomatoes Bake in a pre-heated 400F oven for 20 minutes Enjoy!
