Today, let's take a trip to the Sugar Bush in L'Ange-Gardien, Quebec, which offers one of the most popular sugar shack brunches in Eastern Ontario and Outaouais, Quebec. There's something very unique about sugar shack brunch. You can have it only during the maple syrup season that runs from late winter through early spring, usually right until Easter weekend or until the end of April if it is stretched. When the sap of a sugar maple tree is collected from maple trees, it takes 40 litres of sap to make 1 litre of syrup, and it is simply by boiling the sap to remove water and thus concentrate the sugar that makes maple syrup. I love sugar shack brunch which I've been missing for the past 3 years because of Covid-19. This is the only time of the year you can indulge in maple syrup without feeling guilty!
