Just as Polaris is a guiding light in the sky, Two Stacks are a guiding light in the Irish whiskey industry! Emblematic of the resurgence in popularity of Irish whiskey, Two Stacks are leading the charge in bonding and blending really quality whiskeys. Two Stacks are all about sourcing the best liquid they can get their hands on and blending or finishing it in ways that seek to elevate it beyond its starting position. When it works, it works really well, and boy did it work here! This whiskey, the Polaris 1.1, is a 9 year old single malt originally from the Cooley Distillery which spent most of its life in bourbon casks before spending the last few months before bottling in Cabernet Franc Ice Wine casks from Niagara in Canada. This is a sweet, dessert wine and it has definitely been allowed to impart a lot of rich flavours onto the whiskey. On the nose, Polaris delivers some really rich, sugary berry sweetness, rounded out with some light vanilla cream and a hint of maltiness. That maltiness really shines through on the palate, with more of the vanilla and a taste which reminds me of a caramel apple (although Rose was reminded more of a 'Smores cooked over a campfire). The finish is nice and warming with some more sweetness and, after a breath or two, a slight resurgance of the fruitiness from the nose This whiskey shows off what can happen when a whiskey is aged just right, as it delivers a "cask strength taste" with out the cask strength burn. Some whiskeys can be too hot on the palate, but this, depsite coming in at 59.85%, drinks like a much lower proof whiskey. Don't get me wrong, it's still full of flavour, but it has more of a pleasant warming feeling than a full burn. The trademark Two Stacks transparency is also in full display here, not only letting consumers know where the whiskey was distilled, but also how exactly how long it spent in each cask. This is just one of the little details that, for me, makes Two Stacks a company you can trust: they don't need to hide anything, because it's all good.
