Aromatic, flavorful, and irresistibly delicious this marinated chicken biryani is made with tender chicken pieces soaked in a rich blend of yogurt, spices, and herbs. Marinated Chicken Biryani Recipe Ingredients For Chicken Marinade • 500g chicken (bone-in or boneless, cut into medium pieces) • 1 cup thick yogurt (curd) • 2 tbsp ginger-garlic paste • 1 tsp red chili powder • ½ tsp turmeric powder • 1 tsp coriander powder • 1 tsp garam masala • 2 tbsp lemon juice • Salt to taste • 2 tbsp cooking oil For Rice • 2 cups basmati rice (soaked for 30 minutes) • 4 cups water • 1 bay leaf • 3–4 cloves • 2 cardamoms • 1 small cinnamon stick • 1 tsp salt For Biryani Layers • 2 medium onions (thinly sliced and fried until golden) • 2 tbsp ghee or oil • Fresh coriander leaves (chopped) • Fresh mint leaves (chopped) • 2 tbsp warm milk with a pinch of saffron (optional but recommended) Making Process Step 1: Marinate the Chicken 1. In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, garam masala, lemon juice, salt, and oil. 2. Add the chicken pieces, coat them well, and cover. 3. Let it marinate for at least 1 hour (or overnight in the refrigerator for best flavor). Step 2: Cook the Rice 1. In a large pot, bring water to a boil with bay leaf, cloves, cardamom, cinnamon, and salt. 2. Add soaked rice and cook until 70% done (rice should still have a bite). 3. Drain and set aside. Step 3: Cook the Chicken 1. Heat ghee/oil in a heavy-bottom pan. 2. Add the marinated chicken and cook on medium heat until chicken is 80% cooked and masala thickens. 3. Turn off the heat. Step 4: Layer the Biryani 1. In the same pot or a separate handi, spread half the cooked chicken at the bottom. 2. Add half the rice on top. 3. Sprinkle half the fried onions, mint, and coriander. 4. Repeat with remaining chicken, rice, and garnishes. 5. Drizzle saffron milk over the top layer. Step 5: Dum Cooking (Steaming) 1. Cover tightly with a lid (or seal with dough for authentic dum cooking). 2. Cook on low flame for 20–25 minutes until rice is fully cooked and flavors are absorbed. 3. Rest for 10 minutes before serving.
