Then pour in and spread the sugar around the ramekin and tap out the excess sugar. Now in a pan, melt some butter and add your all-purpose flour, followed by your milk and whisk until the mixture smooths out and thickens slightly. Now in a bowl, put in your dark chocolate, followed by your mixture from your pan and mix together as the chocolate melts. Now pour in your vanilla essence into the bowl, followed by a pinch of salt, your egg yolk and mix the ingredients. In a bowl, whip your egg whites with a handheld mixer, gradually mixing in your sugar, making a mouse. Add 1/3 of your mouse to the chocolate and whisk together, now add the rest of the mouse and mix together. Now fill your ramekin with your Chocolate Soufflé mixture, and created a 1/4 inch space between the dish and soufflé mixture. Bake at 400°F for 12-15 minutes, take out of the oven and sprinkle on your cocoa powder and voila, Chocolate Soufflé!
