today I'm making a chocolate cake today moist delicious to enjoy with your family.. who doesn't like a piece of choc cake filled with choc cream! FOR THE CAKE : this recipe is to make two cake size 18 cm or 7 inch. 4 large eggs 160ml oil 160ml butter 2 tsp vanilla extract 150ml milk 300ml hot water 2 tbsp instant coffee 100g melted dark choc 300g cake flour 100g cocoa powder 200g brown sugar 200g white sugar 2 tsp baking powder 1 tsp baking soda if using unsalted butter add 1/2 tsp salt but I skipped it because I used salted butter. method: 1. preheat oven 2. mix all the wet ingredients (except water) 3. mix all the dry ingredients 4. add the dry ingredients into the wet in two stages and mix in between until fully mixed. then add the melted choc and the coffee that has been dissolved in hot water. 5. divide into two tins that are greased and lined with parchment paper. 6. bake at 170 c for 50 to 60 mins depending on your oven, I used fan forced setting in my oven. you can check if done by using toothpick in the centre. GANACHE: 250g dark choc 70% 250g milk choc 50g butter (optional does not affect the result ) 450g thickened cream 200g thickened cream METHOD 1. chop the choc into small pieces so they melt faster 2. heat up the cream(450g) until it boil then add directly into the choc and butter and mix then cover with cling wrap and let it cool . I've put mine in the fridge and used it the next day so it was so hard with work with. if you do the same please pop it in the microwave for 20 seconds. whisk the 200g thickened cream with 1 tbsp sugar and set aside. whisk the ganache then add the whisked cream and set aside, if the mix is a bit soft refrigerate for 15 - 30 mins.
