We combine veal and beef to achieve a beef-like texture. Traditionally, for a real authentic taste, it is recommended to use beef from the neck and front, with at least 20% fat. We simply add salt and onion water, and then leave the meat in the refrigerator for a full 24 hours. This is key to achieving full flavor and perfect consistency. The next day, we prepare for the next step. We add black pepper, baking soda and a little lemon juice, along with sour water. This combination perfectly rounds off the taste and texture of the meat.
