Μακαρόνια του Φούρνου (Cypriot Pastichio) | Rita's Kitchen A traditional homemade Cypriot dish A step by step guide to making Makarounia tou Fournou AKA Pastichio Prep time: 1.5 hours | Cook time: 1 hour approximately | Oven Temp: 180°C Ingredients: 1.5 Pints of Semi-skimmed Milk 4 Large Eggs 1 Medium sized onion 2 medium Tomatoes -1KG of Mince (this can be any variant we have chosen Pork) 500G Mitsides Mazzanelli B (Bucatini pasta aslo works) 250G Of Halloumi Burgers 4 Tbsp of Plain Flour 1 Tbsp of olive oil 1 tsp Salt 1 tsp Pepper 1 tsp Parsley 1 tsp Cinnamon 1 tsp Mint 1 Chicken Stock Cube Timeline: 00:00 Intro 00:05 Ingredients 00:20 Equipment Method: 00:30 1. Fill a pot with boiling water and add salt 00:38 2. Place a stock cube into the pot on a moderate heat 00:44 3. Grate the halloumi into the dish 01:01 4. Peel & dice the whole onion 01:14 5. Add olive oil to the diced onions & place on a moderate heat 01:23 6. Once the stock cube have dissolved start breaking the bucatini in half and placing into the hot water 01:36 7. Make sure to keep stirring to avoid sticking 01:45 8. Add the mince 01:53 9. Grate the tomatoes 02:02 10. Add the grated tomatoes to the pot with the mince 02:17 11. Add Salt, Pepper, Cinnamon, Mint & Parsley 02:28 12. Drain the water from the pasta into a measuring jug (Make sure to drain well) 03:32 13. Melt some butter in a pan 03:41 14. Add 4 Tablespoons of plain flavour & constantly stir while adding 04:00 15. To the pasta water add half a pint of milk 04:10 16. Gradually add the solution to the pan 04:24 17. Measure a pint of milk and add it to the mixture 04:38 18. Crack & beat 4 eggs 05:10 19. Add the eggs to the pan 05:23 20. Mix until a smooth consistency 05:32 21. Remove the grated halloumi from the dish leaving a small amount in the base 05:37 22. Add half the halloumi to pasta & mix 06:00 23. Add half the sauce to the pasta & mix 06:30 24. Place a layer of pasta in the dish 06:36 25. Add a mince layer & spread evenly 06:45 26. Add the remaining pasta to form another layer 06:53 27. Take the remaining sauce and spread evenly on top 07:02 28. Sprinkle the remaining halloumi on top to form the final layer 07:20 29. Cook at 180°C for approximately 1 hour or until golden brown Have a go at making this dish yourselves.
