IEKEI Ramen : Hakata tonkotsu ramen and Tokyo shoyu ramen combo, the most popular ramen style in Japan today! I am pleased to introduce you to a popular Iekei-Ramen shop in Yokohama, called "Suehiro-ya". Iekei ramen is a combination of Hakata Tonkotsu (pork bone broth) ramen and Tokyo chicken broth soy sauce ramen, and was invented by Minoru Yoshimura in 1974; it has since grown in huge popularity and is now considered one of the most popular ramen styles in Japan. Although Master Yoshimura, the founder of Iekei Ramen has trained many disciples, only a select few have been chosen to open disciple-run shops acknowledged by him. Like the Jedi knights, the shops of such disciples are called the direct descendant shops of the Yoshimura family. Suehiro-ya, introduced here, is one such shop in the Yoshimura-ya direct lineage. Suehiro-ya's ramen is famous for a flavorful pork bone broth seasoned with soy sauce and poured with fragrant chicken oil on the surface, which is a characteristic of Iekei Ramen. The noodles are medium-thick and absorb plenty of the broth. Toppings include smoked roast pork, spinach, and seaweed. The most popular item at Suehiroya is the Char-siu ramen, which is topped with four large pieces of carefully prepared, oven-roasted pork.
