Here is a step-by-step guide on how to make natural organic jaggery with the help of bulls: The first step is to harvest sugarcane. The sugarcane is cut by hand with the help of machetes or sickles. The harvested sugarcane is taken to the sugarcane extractor, where the bulls will be used to extract the juice. The bull-driven sugarcane extractor is set up by tying the bulls to the extractor using ropes. The sugarcane is then fed into the extractor, and the bulls are made to walk around the extractor. As the bulls walk, they turn the rollers of the extractor, which extracts the juice from the sugarcane. Collect the sugarcane juice in a container as it flows out of the extractor. The collected sugarcane juice is then poured into a large iron or copper vessel, called a kadhai. The kadhai is heated using a wood fire, and the juice is boiled until it thickens and darkens in color. Once cooled down then it is scooped out and put on a plain jute cloth to get authentic jaggery or gurr shape.
