I love this cute little cookbook that features lots of favorite and famous food that is served at Dollywood everyday! This is the perfect souvenir if you've ever been to the park and wanted to recreate all those wonderful Southern dishes you ate at the park. I decided to feature the Peanut Butter Fudge because it's a favorite of mine and is found not only at Dollywood but at several places in Gatlinburg and Pigeon Forge. Enjoy!! What you'll need: 1/2 c Unsalted Butter 32 oz Confectioners' Sugar 12 oz can Evaporated Milk 7 oz jar Marshmallow Creme 16 oz jar creamy Peanut Butter 1 tsp Vanilla Extract In a heavy bottomed pan, melt butter. Add sugar and milk. Stir. Cook the mixture to 235 degrees (check with a candy thermometer) If ready, 1/2 tsp of the mixture should form into a small ball in a glass of cool water. Remove pan from heat and add rest of ingredients. Stir until smooth. Poor into a greased 9 x 13 baking dish and allow to set for at least 3 hours or more.
